`Our policy is that we should not offer any special menus to any functions :- christenings, funerals, bus parties, whatever. We are to have one menu ( the printed menu we are moving on to) and in principal we do not serve the menu outside of our normal food service times. If parties, bookings etc wish to partake of what we offer amongst out other regular customers with the same range of choice and meals as are available to them and within the same service times, fine; otherwise we cannot unfortunately give them what they want( giving people what they want not in any case being Samuel Smith`s strong point).
We as you well know have limited staffing hours, both in the hours worked by the managers and in the hours of paid help managers are allowed to organise the business within, we do not want to expend these limited hours (either managers or staff) on accommodating special requirements (buffets, conferences with coffees in private rooms etc etc). Our business relies on regular trade from regular customers serving them and building our trade in that way and is how we want to use our resources and time and space.
