You record the hours that you actually work in the bar, cleaning, admin etc these are the hours that management understand and allocate for what they dont allocate for and you should record on your staff hours are the moments that you are called down from your flat to deal with all the items like, trouble with a customer, beer dispense etc etc etc

Big Jim the goverment still has a department that is responsible for investigating companies that are accused of paying less than the minimum wage, you can call this department what you want, I call it the wages council it really does not matter what the name of the department is whats important is that a body still is available to investigate these type of complaints.

If they are the DPS and are reading this then, as I understand, there is an onus on them to notify the relevant licencing authority.
